Small butchers shops are much better for taste/texture…the animal is not so scared tense, as in big ones, so the meat is way better in taste and texture.
Very much a case of dropping the old ways, without thinking it all through…..we have done the same mistakes here….animals have to travel miles just to get to a slaughterhouse…crazy.
I am lucky we have a beef farmer who is a mate and produces some of the best beef anywhere and there is still a local slaughterhouse, 3 miles from the farm…..!!!!
