There is a LOT of it here on the Big Island, in the jungles of Puna district south of Hilo. Many ‘subdivisions’ are merely plowed gravel roads in the jungle. You can buy a one or three acre lot cheap. I know schoolteachers, medical personnel and others here that live in a shipping container on such a jungle lot. Ample rainfall here on the windward side supports catchment water systems, and all have solar/battery power with a backup generator for rainy days. Propane stoves outside under a steel roof shed, and propane refrigerators, too. I know half a dozen ham radio operators that live this way, and don’t even have cellphones!
