Are the people doing that eating buds instead too? Are those bugs inners cleaned like large animals? Probably not. Now if a survival class that would be something else.
Maybe if they want less meat introduce vegetarian diet and proper combinations for protein. That’s what I’d be telling the school if I had a kid going there. My kids a vegetarian lol Unless they’re candy coated I can’t see them developing a taste for bugs.
