That reminds me of a Lucy show where she ordered a side of beef on sale by the lb and didn’t know how much beef that was nor her friend Vivian who ordered one too and didn’t get the bill till it got there. They wouldn’t take it back so she threatened to put the cow back together. He said that wouldn’t work either.  They tried to sell it on the street before their husbands found out but got kicked out of the butcher shop  Vivian’s uncle gave her a large walk in freezer that  Lucy got stuck in after hiding the beef in the furnace when husbands Ricky and Fred wanted to see the freezer and brought home some beef not knowing what they did. To warm her up Fred turned on the furnace.

I raised Dual Purpose Shorthorn, Simmental, and Red Angus cattle on my ranch in BC….and butchered normally between 5-15 beeves per year for customers. There are several factors I know that have a huge influence on tenderness, marbling, and flavor. One is the age of the beef. The younger the animal the less flavor it has but the more tender the beef. The older the animal the more flavor it has but the less tender the beef. The greatest impact though on how tender the beef is depends on how the beef is handled before, during, and after it is slaughtered. I am no expert but this is what I was taught by the experts and what I followed when I began doing my own butchering.

Before slaughtering  I separated and grained the animals I was going to butcher for 3 weeks  to put a “finish” on their condition. Next, I never let them “see/suspect what was coming” when they were shot, nor did I shoot an animal that was excited and not relaxed, and I cut the jugular and hung them head down immediately so they would bleed out properly, and did the skinning/gutting etc while they were hanging; then quickly moved them to the insulated cooler room which was  set at a temperature of 35 degrees “f” (2 degrees C). Normally it took between 1- 2 weeks to reach the desired “glaze” on the carcass to tell me it was ready to “cut and wrap”. Then I moved each side of beef to the cutting room and the meat saw and tables for cutting and wrapping according to the customers instructions.

This produced the best, tenderest, most flavorful beef and I never had an honest complaint in the 20+ years I sold butchered beef from the ranch. The only complaint I remember was I sold the beef by the quarter or side (hanging weight), and after the trimming/cutting etc the side no longer weighed  as much…but I always kept the scraps for them in case they wanted them for their dog etc.

Your son is not alone in not liking the taste and I think if so it may be a mixture of reasons. I know someone there who said it doesn’t taste the same anymore. Sometimes tastes change though.   The guy I was talking about was from another state and greener and colder one. It also maybe what people developed a taste for. Maybe other countries might prefer theirs over both of ours. Hard to say. I haven’t eaten one in a long time on a personal level but good for iron. I used to like buffalo and lamb too but others might not. I liked wild game over farmed fatty raised game also never been free  but some who never hunted may think it’s too gamey, go figure.

That is strange about credits to export. I wonder how that will affect buying local less there’s a trade involved.

My carnivore diet son has been working in Texas for three months, and he doesn’t see any sign of high quality steaks anywhere. Tough and tasteless, according to him, (my Dad said the same 50 years ago compared to English beef) but the locals rave about them. This may be because butchers don’t dress them properly – who knows – but he’s looking forward to a decent piece of meat when he gets home. So it’s funny that your livestock associations complain about barriers to entry into the Australian market because it sounds like we wouldn’t eat your beef anyway. Such is one of the dangers of tariffs; encouraging mediocrity.

And now TeamTrump is talking about export credits …. which can only be regarded by other countries as a negative tariff by the exporter, requiring retaliation …. indicating that the Liberation Day junket was badly thought out rather than part of a strategy. Export credits are going to reduce the revenue from tariffs, how has that been costed into the MAGA equation? They obviously haven’t. Looks like Trump got carried away with the initial caving by countries subject to his 25% tariffs in the first couple of weeks. They all caved to his demands immediately to get them rescinded, and he assumed any tariff on anyone would work likewise.

Not that any tariff deals with the fundamental inequality between the US and the most tariffed nations; labour costs. If there were no tariffs anywhere, you (and us) would still be flooded with cheap clothing, food, beer (Corona is now brewed in China), toys, electronics, steel etc. because their wages are so much lower. And also because their purchasing power is so much lower there is no market over there for middle class goods produced in America or Europe. They can’t afford them. So no tariffs anywhere would still result in trade deficits for developed countries.

I don’t know about you but I feel sometimes like a hostage that can only do so much for ones that will listen to the warning of the testimonials with my hands tied as I watch all the damage through the years its caused going unabated  before it’s ended. Like a flash  fire that was  left to burn itself out.

As long as it’s fair and something to gain on both sides it’s not caving really. The people on the other hand could be pushing back on the taxes and how many of them are based on using excuses like climate change. That might bring up migration. If they were really worried about climate change why are they over populating their country with migrants they will have to feed when they have to adhere to make up rules these other countries don’t and not realistic in results without migrants yet with them.

Meanwhile Trump’s tarriffs are helping ranching and fisherman I just heard. A rancher of quality beef  came on saying they have been decimated by mostly Asia on tarriffs giving them a advantage and Shrimpers said the majority a high number in the 90 percent is coming from overseas mainly Asia and who wants contaminated shrimp farms from Asia the tarriffs are helping the shrimpers too. People don’t realize the work and knowledge that comes from ranchers raising quality beef and humanity. . SNG knows but not many on  how much knowledge they have to know and active physical work not sitting behind a computer. That they’re losing these ranchers and with them their skills , dedication and knowledge.

I look at Gold as a witness and testimonial of  past generations , the truth and experiences with falling empires and currencies  that was passed down through time. The power grabbers of past and present were based on lies, manipulation, greed and exploitation.  They can’t have the truth standing out as a witness and told you so reminder, so their next move as long as they can still put it off maybe collecting more for themselves in the process until they can’t is predictable but only temporary.
